WHAT WE OFFER

  • Courses from 1 week to 3 years
  • Fully accredited courses
  • In-service training under award winning chefs
  • Fine dining as well as artisanal skills like cheese making, chocolatiering, baking and sourdough, business, food, photography, wine and beverages, commercial food production
  • Business skills training 

THREE YEAR COURSES

These courses are fully certified and require full time attendance. The course fee includes accommodation.

Course breakdown - Professional Chef Qualification

  • WSET level 1 Wine
  • With concurrent delivery of the national qualifications
  • Highfield Diploma for Professional Chefs (UK RQF level 3)
  • Highfield Diploma for Professional Chefs in supervision (UK RQF level 4)
  • Highfield Diploma In Patisserie, Confectionary and Bakery (UK RQF level 3)
  • Cheese Making, Artisanal Sourdough, Gelato & Ice-Cream
  • Basic business and finance for small-business start ups
  • In service training in fine dining, bistro style and food production outlets
  • Other training includes wine tasting, supplier negotiations, simple house keeping for business and hospitality, coffee training

SHORTER COURSES

Shorter courses are available for upskilling of staff in various positions like existing kitchen staff, nanny's, domestic workers, elderly care or for those that will be looking at placements in carer or hospitality jobs internationally.

Up-skilling of hospitality staff is critical to keep your establishment ahead if the curve. 


Courses on offer:

  • Bar Attendant - 5 days (R5500 - 00*)
  • Kitchen Cleaner - 9 days (R7500 - 00*)
  • Table Attendant - 9 days (7500 - 00*)
  • Kids Cooking Classes - one class monthly
